The successful completion of the Clandeboye Banqueting Suite saw a significant rise in business resulting in the need to increase kitchen capacity in the hotel. This provided the chance to modernise all of the back of house facilities associated with the conference centre.

A prerequisite of the brief was that the new kitchen and prep areas was to be located to utilise all of the existing doors and access routes into the existing function rooms, and that the operation of the kitchen could not be stopped during the work.

To add to the constraints, it became clear that the programme would overlap with Christmas, a particularly busy period for hotels, so that advantage could be taken of a January lull.

Working closely with the Contractor from an early stage, the resulting solution was to break the work into phases and build much of the envelope of the new building around and over the existing before removing the existing fabric. Then a staged fit out was undertaken.

The project completed on budget and on programme, and working closely with the hotel management, no bookings were lost and general disruption was minimised. The new kitchen is now part of the marketing strategy for the hotel
